"Special" Brownies

Ok...not those kind of "special" brownies.
Get your mind out of the gutter.

You'll see soon what makes these brownies "special". The "special" ingredient IS green though...
Well, green and orange. This is my variation of a recipe from
Jessica Seinfeld's book, Deceptively Delicious.
I saw this recipe on an episode of Oprah.
She was raving all over herself about these brownies and I decided to see if it was all an act or not. (I couldn't find a link to the real recipe so if you want it, run out and buy the book. It's full of lots of fun recipes to trick your kids into eating healthier. *evil laugh*)
So, last week I made my first batch of them.
The next day, I had 2 friends (Jackie and Bonnie) over to plan a baby shower.
I put these brownies out, and yes, I did warn my guests about the "special" ingredients in them.
Despite this knowledge, the pan was almost licked clean by the time we were done. (well maybe not licked clean, but you get the idea).
So, I'm making them again.
And I decided to share the process with you.



Brownies

*nonstick cooking spray
* 3 ounces semisweet chocolate chips(I used a shot glass for measuring)
*1/2 cup carrot puree
*1/2 cup spinach puree
*1/2 cup firmly packed light brown sugar
*1/4 cup unsweetened cocoa powder
*2 Tbsp trans-fat free margarine
*2 tsp pure vanilla extract
*2 large egg whites
*3/4 cup all purpose flour
*1/2 tsp baking powder
*1/2 tsp salt
*2 handfuls chocolate chips

1. preheat the oven to 350 degrees F. Coat an 8x8 inch baking pan with cooking spray.

2. Melt the chocolate in a double broiler
(This is where it gets a little weird)

3. In a mixer, combine the melted chocolate, vegetable purees, sugar, cocoa powder, margarine, and vanilla, and whisk until smooth, about 2 min.

4. Whisk in egg whites. Stir in the flour, baking powder, salt and chocolate chips with a wooden spoon.
(It must not be that bad, Wyatt licked the bowl and the spoon)

5. Pour the batter into the pan and bake 40 minutes. Cool and cut into 12 squares.

Oh my goodness! Those brownies were delicious! Guess what I made last night? Kelly's yummy brownies : ) I had a craving. I probably should have made the "healthy" brownies. Oh well. April and I are going to have a puree day and try out the mozzarella sticks on our boys. Should be fun!!!

I'm glad that Ms. Seinfeild made that cook book, but I am kicking myself for not doing it myself. Didn't we all do this trick of hiding pureed food in our kids food, I still do it with spagetti and chili. Yike, why didn't I do that!I suppose Oprah wouldn't have asked me to be on her show and I wouldn't have a top selling cook book right? Anyway, I'm glad you enjoyed the brownies and I will have to try soon. Happy baking!
